SPCA calls eating some animals an "ethical choice"

The BCSPCA's most recent newsletter is entitiled: HUMANE HOLIDAY MEAL and includes recipes such as 'Garlic Roast Chicken'.
Mmmmm - imagine, fresh killed animals on your table and feeling warm and fuzzy about your choices - if the SPCA says it's O.K., what do you have to worry about?

But I have to ask: how can it be ethical to end the life of one chicken because it was allowed to live a nicer life than some other chickens?
It would be interesting to know if there is an ethicist who says that that is ethical?

At http://www.spca.bc.ca/welfare/farm-animal-welfare/spca-certified/spca-certified-recipes/Garlic-Roast-Chicken-and-Fresh-Sage-Stuffing.html the SPCA's recipe tells you to pat the chicken dry. Sounds so benign. Almost loving. Especially since it also tells you to leave the chicken's skin on.

Ingredients:
1.7kg Rockweld Farm Chicken, washed and patted dry
20 garlic cloves, skin intact
1 lemon, halved
3 bay leaves
1 tbsp of olive oil
1 1/2 tbsp of finely chopped fresh rosemary
1/2 tsp of sea salt
400 mls of chicken stock
100 mls of white wine
Kitchen string for tying the chicken legs
Aluminum foil
